Frangipane is a fragrant, moist filling made with ground nuts or nut paste such as almond paste. Ours is made with only natural fresh whole nuts that are toasted and then finely ground and mixed with fresh butter, eggs, sugar and flour and natural flavours such as pure bourbon vanilla and freshly zested citrus fruits.
We serve almond, hazelnut and pistachio frangipane tarts swimming in a variety of seasonal fruit fillings. All Frangipane tarts feature a very tender shortbread crust made with cultured European style butter.

Whole baby Forelle pears poached in late harvest vidal and spices nestled in a bed of almond frangipane and decorated with sliced toasted almonds. Looks spectacular, great for a dinner party.

Caramelized apple slices fanned over a base of almond frangipane. We usually use local Matsu apples because they are so juicy.

swiss gruyere tarts
A classic mini Swiss cheese tart made with flaky pate brisee, Swiss gruyere and a rich egg and cream custard with pepper and fresh nutmeg.
Available in individual 4 inch or by special order, in 10 inch which serves 8-10. These freeze beautifully; just reheat in a hot oven. Terrific with salad and a glass of wine for lunch or light supper. One customer loves them for breakfast every morning when they are fresh out of the oven. Available to order in a larger size.
